Breakfast Sausage Brunch Dip

I kind of stole this recipe from The Pioneer Woman, Queso Fundido but put my own spin on it.
 I started with Mild Country Sausage. Let me say I always buy Bob Evans, but the Tennessee Pride was just as good. I browned it in a skillet and drained.
 I cut up a bit of Vidalia onion, green onions, tomato and bell peppers. I love these bag of peppers, they are so cheap, like $1.89 a bag. So easy, Cut off the top, reach in with finger and thumb and pull the seeds out. So easy.
 The I took the pizza cutter to some cilantro. The above pictures looks like it's all smushed together. Well, it is. I roll it up in paper towel and then put in a Ziploc with all air removed. I think it lasts longer when I do that. So in above pic I didn't fluff it for pic cause I don't want the oxygen to get to it. I pull out a few pieces and put it back in the back.
 I grabby whatever bags of open cheese I had. I am a cheese junky. I have 5-6 different open bags and probably 10 unopened bags. I am in a panic when I don't have cheese and sour cream. I can almost live without eggs but cheese..NO!!!!
 So then I threw the sausage back in the skillet on low heat, cracked a few eggs and added cheese.
 Now Ree would put the tomato, peppers, onion, cilantro etc in the skillet and let  it all bubble together but I knew no one in the house would eat it so I left it as meat, cheese and eggs. Everyone could put what veggies on top. Then dip with tortilla chips, roll up in a soft tortilla or however you choose. I think for me it's a keeper. Not sure if the family agreed but it's an option. The family is not picky but some things they don't think is as mouth watering as I do. Speaking of.. I smell my ribs I have cooking in the oven for dinner.. Stay tuned ..

My day

All day, every day I live with unexplained bone pain. By bed time last night it was getting pretty bad.  All night I tossed and turned with terrible pains in my arms and legs. Today I tried to do some crafting but just can't come up with anything...plus I hurt too bad to try.  So... I found my self a spot in my big comfy craft chair and put my feet up. Well I should clarify that I didn't sit in my chair all day. I cleaned our bathroom, put clothes away, did 3 loads of laundry and made this awesome mushroom dish. (photo on the left) my pinterest boards. A made a short minute video about this. Then I made dinner. I made Greg a Buffalo Chicken Pizza with Ranch dressing and I made me a veggie pizza with spinach, mushrooms, fire roasted tomatoes and onion. Yummo!!! Oh, and a made dessert. I will call it frozen berry cake. OMG.. so good and so.. so E A S Y!!! I can't believe I have never heard of this before. ..



Josie came home with her midterm.. very impressive...
 Way to go Jos!!!














But on top of that I did nothing, especially any crafts. I did however surf and found some new gals I will stalk for a while and scraplift some of their ideas.  "SCRAPlift" is a new word I heard the other day and I am going to use it.

Four O'clock Foto~Breakfast

Drake was riding Sunday morning and I was going with him. His father and I prefer to be there incase something happens. He has only rode a few times without us..Maybe 2 times. I was busy loading pics and getting ready to leave when my man made me this sandwich. We were at another Kroger in the area and I grabbed Aunt Millie's sub buns. When I got home I found they were her Hawaiian buns. They are tasting but not sure for steak hoagies. So we have been trying to eat them up. It was very tasty.. especially since I didn't make it. Eggs, Bacon and cheese. SwEEET!!!and then the glass. I bought these Christmas glasses years ago. We only have one left. For some reason when I drink orange juice I always use this glass. Crazy me. Well monster 3 just got off the bus.. and monster 1 is bringing a friend home from college with her. They are going to decorate a cooler for a frat formal in Hilton Head.. Gotta run.

Four O'clock Foto- Potato Salad

I take leftover baked potatoes and let them cool. Then I add cute up celery, onion, boiled eggs. The mixture, juice, dressing or whatever YOU call it is made of apple cider vinegar, Hellman's and mustard. I also salt and pepper the crap out of it..

Baked Potatoes
Onion
Celery
Boiled Eggs

Apple Cider Vinegar
Hellman's
Mustard

Salt and Pepper..

What do you call the sauce on potato salad?

Meatloaf..Kid approved

This meatloaf has been kid tested over and over for years. It's the number one winner for the family meal.


What you will need.. I don't measure so if it's too dry add more milk. If its too wet add more oats or cheese.

Bake on 350 for about 20 minutes or until brown.

Hamburger

Oats

Onion

Carrots (optional)

Eggs

Milk

Cheese

I also add fiber powder and blue/green algae sometimes.


Topping- Brown sugar/ Mustard/ Ketchup

Mix all that together
Then use Salt/Pepper/Chives/Parsley/Mrs. Dash or I used Organic Everyday seasoning from Trader Joe's.

Mix again and then form into large hamburger patties. This is great cause you don't get the crusty end or the blahhhh middle piece. Everyone has their own.

The topping is brown sugar, ketchup and mustard mixed together and spread on top before baking.

I really should time, measure and pay more attention to what I really put in stuff but sorry..I don't.

NEXT!!!!!-

oh yum.....

NOT!!!! I made this chicked casserole and it looked so good.. and when I got it out of the oven ... the noodles were pasty.. It was nasty... I grabbed my keys and said..get in the car..we are going to Chipotle.. Nobody aruged.. and I think it was the best Chipotle I have ever had.. sometimes it just pays to eat out..

This casserole sat on the counter and then went straight into the trash. I guess I tried a different brand of egg noodle and they just don't work. I can still taste the paste..oh yuck..

Dress up the Pumpkin

We went to the store the other day and Monster 3 mentioned that pumpkin pie looked good. That's her favorite pie of all time.. So she came home from school and was doing homework and I asked her if she wanted a piece.


I flopped it out of it's store packaging and threw it in a bowl..then it hit me.. Let's fancy it up a bit. So I grabbed the whip cream, sprinkled with nutmeg and shook out some fall cupcake sprinkles.. So much more fun to eat when it's fancy.. and it only took a few seconds. Strawberry Shortcake

This is how I make strawberry shortcake. I use....Bisquick.... I follow the shortcake recipe on the box plus I throw in a dash of Raw Sugar to sweeten it up a bit and there you have it.. This time I layered a thin layer of Strawberry Topping inside.. It didn't work too well. The topping fell to the bottom and baked that way. It was okay but I won't bother the next time. I topped mine with cut strawberries and blueberries with whip cream.. The finished product picture didn't turn out ..but you all know what strawberry shortcake looks like.

Nachos

A few weeks ago at one of Drake's races one of the moms brought salsa and Drake's loved it. So I asked what was in it and she told me. The same as my Pico

but she added beans. So I ran home and made some and then we had nachos for dinner and it was the perfect topping.


Tomato

Onion

Jalapeno

Cilantro

Lime or lemon juice

Salt..
